Creamy Zucchini Soup

2 tbsp butter
1 med onion, chopped
2 med potatoes, peeled
1 lb zucchini, peeled and sliced (2cups)
1/4 c. parsley
3 c. chicken broth
1 c. plain yogurt
2 tbsp lemon juice
1/2 c. chopped chives
1/2 tsp pepper

In 3 cups chicken broth and butter, boil onion and zucchini and potatoes until tender. Puree these when done, and then add remaining ingredients. Garnish with chives. (I usually stir in some sour cream or extra yogurt)

I know it's summer and still kinda warm to eat soup, but I know we all have lots of zucchini! This soup is yummy!!

Hey I already made Zucchini soup. I liked it but my siblings didnt seem to care for it so maybe ill try this one next time.
